Vaniljsnurror

Det var länge sedan jag bakade bullar. Mestadels på grund av att det tar så lång tid med jäsningen. Men jag kan säga att det är banne mig värt det! Detta var första gången jag testade på att göra snurror. Innan har det bara varit vanliga rull degar. Att prova på något nytt är alltid roligt och det är inte så svårt som man kan tro.
På mitt instagram, johannambakar, hittar ni en liten video på hur jag gjorde mina snurror.
Jag gick efter ett saffrandegs recept från konditorn Magnus Johansson men ändrade om lite. Vaniljfyllningen är från
bakar-kungen Roy Fares!
Så sätt igång och baka och njuuut hörrni!
 
 
 
Vaniljsnurror ca 35 st 
 
Fördeg
500 g mjölk rumsvarm (Jag tog ekologisk lantmjölk)
500 g vetemjöl (jag hade Gotlands mjöl från Labans kvarn)
50 g jäst
200 g strösocker
2 tsk malen kardemumma
 
Blanda ihop mjölk, vetemjöl, jäst, strösocker och kardemumma i en köksassistent på låg effekt i 15 minuter. Låt degen jäsa övertäckt i ca 30 minuter.
 
Deg
500 g vetemjöl
1 tsk salt
200 g saltat smör, rumsvarmt
1 ekologiskt ägg
 
Tillsätt vetemjöl och salt till fördegen och bearbeta den väl till en seg och elastisk deg. Tillsätt ägget. Knåda in smöret i degen, lite i taget, till en smidig deg. Låt degen jäsa i ca 30 minuter.
 
 
Vaniljfyllning
 
150 g ljus sirap
170 g strösocker
250 g smör, rumsvarmt
50 g Maizena
40g florsocker
1 1/2 tsk vaniljpulver
 
Blanda alla ingredienser med elvisp eller för hand. 
Lägg upp degen på lätt mjölat bakbord och kavla ut till en rektangel. Degen ska vara cirka 4 millimeter tjock. Bre på fyllningen.
 
 
 
Vik den ena långsidan mot den andra så att du behåller rektangelns längd. Skär ca 2 cm remsor. Dela dessa på mitten nästan ända upptill. Tvinna de delade remsorna och snurrar dem om varandra. Änden avslutar du med att lägga under snurran. Lägg alla snurrorna på plåtar klädda med bakplåtspapper. Dessa ska nu jäsa i 90 minuter övertäckta med bakduk.
 
 
 
 
 
 
 
 
 
Sätt ugnen på 190 grader. 
Pensla med ett ekologiskt ägg och pärlsocker. Låt bullarna grädda i ca 12 minuter tills de har fått en fin färg. Låt dom svalna under bakduk sedan är det bara att njuuuuta.
